Rausell is a gastronomic space with three souls under one roof: the bar, a meeting point where the finest treasures of the sea are laid out daily; the restaurant, with two dining rooms and market cooking; and the shop, with the take-away classics of always. 1948 — The house opens.

Rausell opens its doors in the Arrancapins neighbourhood. It is born as a local bar, with the counter as its heart: a place of encounter, friendship and closeness. More than 70 years later, it remains on the same corner of Ángel Guimerá.

Two Rausell generations behind the counter

1973 — The spit-roast chickens.

The second generation adds spit-roast chickens to the bar, cooked with a masterful inherited formula that is still in force today. The take-away shop opens beside the bar and the dining room.

At the helm, the Rausell brothers: José, of produce and kitchen; Miguel, of service and a cellar of more than 150 cavas, champagnes and wines. Native-breed beef on the kamado, seafood from the Cullera, Gandía and Dénia markets. The bar where, El País says, the chefs eat.

THE BAR — THE HEART OF THE HOUSE

A parade of dishes, tapas and sandwiches.

The bar is a meeting point where the finest treasures of the sea are laid out daily. Bravas, XXL cañaíllas, clóchina valenciana, salazones salad with López anchovies, the trilogy of hake cheeks — battered, in pil-pil sauce and grilled —, esgarraet, pig trotters, prawns that arrive every afternoon from Dénia, langoustines from Vinaroz and santiaguiños. The same house, no table booking required.

Market seafood, grill and kamado.

October 2025 menu. We receive fresh produce daily from the Cullera, Gandía and Dénia markets; native-breed meat raised the traditional way.
